Here's How It All Started...
When I decided to quit my job of 12 years being in the corporate world as a computer geek, I knew I was at a point in my life that I had to take a chance and try make a dream of mine come true!
So... I decided to take a run at opening my own restaurant and share my Dad's BBQ magic with as many people as I could!
Growing up with Dad, (yes-there is a real Uncle Jack) he taught me and my two sisters how to barbeque the old fashioned way, with briquets. Every weekend he would fire up the grill, which he built on his own, and showed us the way BBQ should be done. He had his "secret" dry rub that he used on everything from chicken to steaks to spareribs. Although I had to give up the briquets and use a smoker instead, I still use his "secret" on all things smoked at the restaurant.
From the meat to the BBQ beans (my Mom's recipe) to the of photos of my grandparents, great-grandparents, aunts and uncles hanging on the walls, I wanted to share as much of my family history as I could. With the support of my family, friends and the community of Amity (which I was born and raised in), I opened Uncle Jack's Bar-B-Que on January 29th, 2012.
I am proud to say... My dream has come true!
